Note: This course can not be combined in an individual program with HNH-32206 Food Components and Health and/or HNH-52902 Nutrition and Health part 2: Micronutrients and Undernutrition (online).
This course is a second introductory course into the physiological, biochemical and metabolic aspects of human nutrition. It covers the basic chemical and metabolic properties of the various nutrients, focusing on water and fat-soluble vitamins, minerals, trace elements, and the generation of energy from the macronutrients fat, protein, and carbohydrates. This course will lay the groundwork for understanding how nutrients affect human health and disease.
General learning objectives are stated below. Specific learning objectives per course week / lecture will be posted in Brightspace.
After successful completion of this course students are expected to:
- understand the structure/function relationship of the various nutrients;
- know the function of nutrients in human metabolism;
- have a basic knowledge about the nutritional biochemistry for metabolism,
- have a basic knowledge about the relation between nutrition and physical activity;
- know the principles of energy regulation within the human body;
- have a basic understanding of some of the major nutrition-related disorders of modern society;
- be familiar with some current nutrition research projects with specific focus on why the chosen design and techniques are applied.
In addition, these skills will be further developed:
- basic laboratory skills;
- reporting and writing skills.
To reach these objectives, the student will:
- prepare and follow lectures (including online knowledge clips / massive open online courses [MOOCs]);
- actively participate in tutorials in which human case studies will be discussed to exemplify the metabolic aspects of (healthy) nutrition;
- follow a practical course in which various basic (molecular and analytical) laboratory techniques will be applied (mandatory);
- prepare an individual written assignment that is based on a scientific paper (mandatory). This assignment is part of the Writing learning trajectory of the course “Skills portfolio for BVG”
Assessment of the learning outcomes is tested in 3 ways. The first part of the assessment of the learning outcomes will be a closed questions exam. Questions are based on the lectures, tutorials, and MOOCs. Example exam questions will be posted on Blackboard during the course. For the practicals the students need to complete short reports that together count for maximal 0.6 point of the total score of 10 points that can be obtained for the course.
The written assignment will be evaluated (pass / fail).
No textbook is used. All teaching materials (slides, recorded lectures, tutorials, manuals, links to scientific papers) will made available online. Access to a dedicated instance of the MOOCs will also be provided. Although no text book is required for the course, upon request the course coordinator can advise on suitable reference books that can be borrowed at the library, or bought by the student.
